Spinach pancake tartlets

    quantity basic pancake batter
  • 300
    g
    spinach leaves (stems removed), shredded
  • 250
    g
    bacon, cooked and finely chopped
  • 375
    ml
    grated Cheddar cheese
  • 50
    ml
    cake flour
  • 2
    ml
    salt
  • pinch pepper
  • 3
    eggs, whisked
  • 150
    ml
    mayonnaise
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Prepare the pancakes as described for the basic pancake batter. Spray the hollows of a muffin pan with non-stick spray and place the pancakes in the prepared muffin pan. Boil the spinach in a little water until just tender. Drain well and mix with the bacon and Cheddar cheese. Mix the remaining ingredients. Spoon a little of the spinach and cheese filling into each pancake, pour over the egg mixture and bake for about 30 minutes or until the egg mixture has set. Serve hot or cold. Makes 20 tartlets.
