Spinach muffins

    spinach, finely chopped, boiled and liquid squeezed out

    margarine
  • 250
    ml
    milk
  • 250
    ml
    water

    eggs, whisked
 

Method

about 25 minutes
 
Preheat the oven to 180 ºC (350 ºF). Grease a few muffin tins. Sift the dry ingredients into a large mixing bowl. Add the cheese and spinach and mix. Melt the margarine and add the remaining ingredients. Fill the hollows of the muffin tins three quarters of the way and bake for about 25 minutes or until done. Add a little extra water, about 100 ml (2/5 cup), to the remaining dough if it has to wait until you make the next batch, as the mixture thickens while standing.
