Ingredients (13)

300.00 g spinach
3.00 onions — small, chopped
3.00 garlic — cloves, crushed
oil
50.00 g mature cheddar cheese — grated
50.00 g breadcrumbs — white, dried
250.00 ml cream — thick
3.00 eggs — large, whisked
5.00 ml nutmeg — whole, freshly grated
10.00 ml soy sauce
5.00 ml ginger — ground
5.00 ml freshly ground black pepper
salt — to taste

Method:

Preheat the oven to 180 ºC. Line a small loaf tin with butter paper.
Shred the spinach. Stir-fry the onion and garlic in heated oil until tender. Add the spinach and stir-fry. Stir in the cheese, breadcrumbs, cream and eggs. Process everything in the food processor until smooth. Season and turn into the prepared loaf tin. Place the tin in a oven pan filled halfway with boiling water. Bake for 1 1/2 hours or until a testing skewer comes out dean when inserted. Cool slightly, unmould and slice.
Makes 1 small loaf.
