Spinach loaf

    spinach, stems removed and well rinsed
  • 3
    small onions, chopped
  • 3
    cloves garlic, crushed
  • oil
  • 50
    g
    mature Cheddar cheese, grated
  • 50
    g
    dried white breadcrumbs
  • 250
    ml
    thick cream
  • 3
    large eggs, whisked
  • 5
    ml
    freshly grated nutmeg
  • 10
    ml
    soy sauce
  • 5
    ml
    ground ginger
  • 5
    ml
    black pepper
  • salt to taste
 

Method

Preheat the oven to 180 ºC. Line a small loaf tin with butter paper. Shred the spinach. Stir-fry the onion and garlic in heated oil until tender. Add the spinach and stir-fry. Stir in the cheese, breadcrumbs, cream and eggs. Process everything in the food processor until smooth. Season and turn into the prepared loaf tin. Place the tin in a oven pan filled halfway with boiling water. Bake for 1 1/2 hours or until a testing skewer comes out dean when inserted. Cool slightly, unmould and slice. Makes 1 small loaf.
