Spinach bake

    eggs
  • salt and black pepper to taste
  • fresh coriander leaves (optional)
 

Method

 
Preheat the oven to 180ºC (350ºF). Grease an ovenproof dish. Sauté the onion and chopped chilli in the oil until the onion is soft. Add the cumin and turmeric and mix. Turn into a mixing bowl. Add the spinach and sweetcorn and mix. Sift the cake flour, baking powder and salt together and add to the spinach mixture with the mealie meal. Whisk the milk and eggs together, season to taste with salt and pepper and mix. Turn into the prepared dish, spreading evenly. Bake for about 40 minutes or until the egg mixture has set. Sprinkle with fresh coriander leaves, if desired. Serve with tomato and onion sambal. Serves 4-6.
