    packet baby spinach leaves, washed
  • 135

    fresh peas, blanched
  • 135
    g
    asparagus tips, blanched
  • 6
    radishes, washed and sliced
  • For the vinaigrette:
  • 3
    Tbs
    extra-virgin olive oil
  • ½ tsp mustard
  • ½ tsp honey
  • 2
    Tbs
    lemon juice
  • sea salt flakes and freshly ground black pepper
 

Method

1. Whisk together the dressing ingredients.
2. Mix together the salad ingredients, dress, toss well and serve immediately.
