Spinach and turkey salad

    cooked turkey
  • 1
    large onion, sliced

    young spinach
  • 175
    g
    baby fennel
  • 2
    oranges, peeled and segmented
  • salt and black pepper
  • 30

    sunflower seeds
  • GINGER DRESSING
  • 7
    ml
    soy sauce
  • 30
    ml
    honey
  • 25
    ml
    freshly grated ginger
  • 50
    ml
    red wine vinegar
  • 150
    ml
    sesame or sunflower oil
 

Method

 
Combine all the ingredients for dressing, adjust seasoning. Remove skin from turkey and cube. Peel and slice onion into rounds. Wash spinach and break into bite-sized pieces. Finely shred fennel bulb and combine all salad ingredients. Season and toss salad with dressing. Serve with extra dressing on the side.
