SAUCE
300.00 g smoked salmon trout — trimmings
4.00 tomatoes — peeled
2.00 spring onions — finely chopped
250.00 ml cream
125.00 ml fresh dill — chopped
1.00 lemon juice
2.00 ml sugar
65.00 ml yoghurt — natural
freshly ground black pepper

500.00 g noodles — ribbon
300.00 g spinach — shredded, steamed
85.00 ml parmesan cheese — freshly grated
65.00 ml fresh chillies — 573
freshly ground black pepper
fresh dill — to garnish

Method:

SAUCE: Finely chop salmon trout. Dice tomatoes, drain and toss with salmon.
Stir in remaining sauce ingredients and season to taste.
PASTA: Cook pasta according to packet instructions.
Rinse and drain cooked pasta, return to stove and toss with spinach, Parmesan cheese and oil.
Season with black pepper and serve with sauce at room temperature, garnished with dill.
