Spinach and mozzarella balls

    g
    Pyotts KIPS, Spring Onion flavour
  • 125
    ml
    finely grated Parmesan or Pecorino cheese
  • 65
    ml
    olive oil
  • 125
    ml
    basil leaves
  • 250
    ml
    firm mashed potato
  • 500
    ml
    cooked spinach, drained well and finely chopped
  • 1 - 2
    large garlic cloves, finely grated or chopped
  • Salt and milled black pepper
  • Ground nutmeg
  • 200
    g
    mozzarella cheese, cut into 2 cm cubes
 

Method

Process the Pyotts KIPS, olive oil and basil in the processor into coarse crumbs.
Mix together the mashed potato, spinach and garlic and season well with the salt, pepper and ground nutmeg.
Take a spoonful of the mixture and flatten it slightly in your hand.
Place a cube of mozzarella in the centre of the mixture and fashion it around the cheese into a ball.
Roll the ball in the crumb mixture, patting the crumbs into the ball.
Continue until you have used all the spinach mixture.
Bake on a greased baking sheet in a pre-heated oven at 190 ºC for 10 – 15 minutes or until the cheese inside has melted. Serve warm.
