Spinach and feta triangles

Ingredients (11)

1.00 onion — finely chopped
oil
3.00 spinach — finely chopped
225.00 g feta cheese — crumbled
125.00 g ricotta cheese — or smooth cottage cheese
1.00 eggs
1.00 eggs — yolk only
nutmeg — ground
salt and freshly ground black pepper — to taste
500.00 g phyllo pastry
butter — melted

Method:

Preheat the oven to ,190 ºC (375 ºF) .
Grease a few baking sheets.
Sauté the onion in a little oil until tender.
Boil the spinach until tender in a little water, drain well and mix with the onion. Add the feta cheese, ricotta and egg and egg yolk (whisked together). Season with a pinch of nutmeg and salt and pepper and mix.
Brush a sheet of phyllo pastry with melted butter and place another sheet on top. Cut into four long strips.
Place a spoonful of the mixture at the bottom of a strip of pastry, fold the bottom corner over the filling to cover and continue folding to make a triangle. Repeat with the remaining ingredients.
Place on the baking sheet, brush each triangle with melted butter and bake for about 15 minutes or until golden brown.
