Spinach and feta cheese topping

    short French loaf, halved lengthways
  • 1
    onion, finely chopped
  • 1
    red pepper, seeded and diced
  • oil
  • 150
    g
    prawns, drained
  • 1
    avocado, peeled and diced
  • lemon juice
  • salt and freshly ground black pepper
 

Method

 
Switch on the oven grill. Place the halved French loaf on a baking sheet and spread with garlic butter (see recipe). Sauté the onion and red pepper in oil until tender. Add the prawns and avocado and season with a little lemon juice and salt and pepper to taste. Spoon the filling on both halves of the loaf and grill for a few minutes until hot. Serve hot, preferably immediately. Serves 4.
