Spinach and cream cheese sauce

  • 150
    g
    spinach (white stems removed), coarsely shredded
  • 125
    g
    cream cheese or smooth cottage cheese
  • 65
    ml
    grated Parmesan cheese
  • 125
    ml
    cream or plain yoghurt
  • 2
    ml
    lemon pepper
  • pinch nutmeg
  • cooked pasta for serving
 

Method

 
Rinse the spinach well under running water. Place in a microwave steamer and cover. Pour 125 ml (1/2 cup) boiling water in the bottom of the reservoir, place the steamer on top and microwave for 1 1/2 minutes on 100 per cent power. Drain and press out excess water. Place in the food processor along with the remaining ingredients and process until well blended and finely chopped. Serve with hot, cooked pasta.
