Spinach and chicken salad with blue cheese croûtons

    onion, very finely
  • chopped

    wine vinegar

    seed mustard
  • salt and freshly ground black pepper
  • chopped parsley

    fresh young spinach (hard stems removed), shredded

    pears, thinly sliced
  • 4
    cooked chicken breasts, sliced

    toasted walnuts
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Heat the butter and blue cheese in a pan over medium heat until melted. Pour over the bread cubes and mix. Spread the bread cubes evenly on a baking sheet and bake for about 15 minutes or until golden brown. Turn every now and then with an egg flip. Cool. Blend all the ingredients for the salad dressing. Set aside until needed. Arrange the spinach, pears and chicken breasts on an attractive platter. Sprinkle the blue cheese croûtons and walnuts on top. Pour over the salad dressing just before serving or serve separately.
