Spinach and cheese cannelloni

    frozen spinach, defrosted and drained

    smooth cottage cheese

    Parmesan cheese

    nutmeg
  • salt

    butter
  • 45
    ml
    cake flour
  • 250
    ml
    milk
  • 80
    g
    Cheddar cheese, grated
  • extra Parmesan cheese
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Grease an ovenproof dish with margarine. Cook the cannelloni tubes in rapidly boiling salted water until just done. Drain and keep warm. Combine the spinach, cottage cheese, Parmesan cheese and nutmeg and season to taste with salt and pepper. Fill the cannelloni tubes with the mixture. Arrange in the prepared dish. Prepare a white sauce using the butter, cake flour and milk. Season with salt and pepper and add the Cheddar cheese. Stir until the Cheddar cheese has melted completely. Pour over the cannelloni tubes. Sprinkle Parmesan cheese on top and bake for about 20 minutes or until the cheese is golden brown.
