Spinach and carrot pasta salad with apricots and cashew nuts

    spinach and carrot noodle twists

    dried apricots, sliced
  • 1
    head of chicory, separated into leaves
  • 3
    carrots, cut into julienne strips
  • 1
    green pepper, cubed
  • 100
    g
    roasted cashew nuts
  • 25
    ml
    chopped fresh coriander
  • 200
    g
    white Cheddar, cubed
  • DRESSING
  • 30
    ml
    white wine vinegar
  • 20
    ml
    mustard
  • 90
    ml
    olive oil
  • 15
    ml
    chopped fresh coriander
  • salt and freshly ground black pepper
 

Method

8‑12 minutes
 
Prepare the pasta according to pack instructions and set aside to cool. Toss all ingredients together with the pasta and drizzle with the dressing. Garnish with fresh coriander sprigs. DRESSING: Place the vinegar and mustard in a small bowl. Whisk in the oil gradually. Add the chopped coriander and season with salt and freshly ground black pepper. Mix well before serving.
