Ingredients (14)

BREAD CUBES
250.00 g bread — white, crusts removed, cubed
110.00 g butter
1.00 garlic — cloves, crushed
75.00 ml fresh parsley — chopped
SALAD DRESSING
2.00 eggs
100.00 g sugar
2.00 ml salt
1.00 ml freshly ground black pepper
2.00 ml mustard — powder
125.00 ml vinegar — grape
60.00 ml water
250.00 ml yoghurt — plain
300.00 g spinach — shredded
2.00 eggs — hard-boiled

Method:

Arrange the bread cubes evenly on the glass platter of the microwave oven. Microwave uncovered on 100 per cent power for 2 minutes. Stir lightly to separate the cubes and microwave for a further 3-4 minutes, stirring at one-minute intervals. Take care that the bread cubes don’t burn on the inside.
Melt the butter, with the clove of garlic and parsley, for about 1 minute in the microwave oven. Add the bread cubes and mix. Spread the bread cubes evenly on a baking sheet and grill till golden brown. Cool.
Beat all the dressing ingredients, except the yoghurt, together till well blended. Microwave for 3 1/2 minutes on 100% power, or till the dressing thickens. Stir regularly. Cool slightly and stir in the plain yoghurt. Cool completely.
Mix all the salad ingredients together and spoon into a dish. Serve with the dressing.
Serves 4.
