Spicy vegetable stew

    allspice

    butternut cubes
  • 250
    ml
    sweet potato cubes
  • 1
    red pepper, sliced into strips
  • 3
    chillies, seeded and chopped
  • 3
    green bananas, sliced
  • 410

    canned chopped tomatoes
  • 410

    canned coconut milk
  • 425

    canned whole-kernel corn
  • 5

    chopped fresh thyme
  • 10
    ml
    chopped fresh oregano
  • 125

    orange juice
  • salt and freshly ground blck pepper to taste
  • 15

    chopped fresh coriander
 

Method

 
Heat the oil and fry the onions until soft.
Add the garlic, coriander, nutmeg, allspice and cumin and fry for another 30 seconds.
Add the butternut, sweet potato, red pepper and chillies.
Stir-fry until all the vegetables are coated with the spices.
Add the bananas, tomatoes, coconut milk and corn.
Add the thyme, oregano and orange juice.
Season with salt and pepper.
Bring the mixture to the boil, reduce the heat, cover and simmer slowly for about 45 minutes or until the vegetables are done but not mushy.
Scatter with fresh coriander just before serving.
