Spicy vegetable spring rolls

Ingredients

    oil
  • 2
    cloves garlic, crushed
  • 5

    freshly grated ginger
  • 1
    chilli, chopped
  • 2
    carrots, peeled and cut into thin strips
  • 500
    ml
    shredded cabbage
  • 1
    red pepper, chopped
  • 20
    ml
    freshly chopped coriander
  • 500
    g
    phyllo pastry
  • 100
    ml
    melted butter
 

Method

30-40 minutes
 
1. Heat oil in a saucepan and sauté garlic, ginger and chilli for one minute. Add remaining vegetables and stir-fry for one minute. Add remaining vegetables and stir-fry for one minute. Stir in coriander and season to taste Cool. 2. Lay three sheets of phyllo on top of each other, brushing each with melted butter. Cut into 18 cm squares. Place a little filling in the centre of each square. Fold two sides of pastry over filling, then roll up tightly. Repeat with remaining ingredients. 3. Place on a greased baking tray with the overlapping edge at the bottom. Brush well with melted butter and bake in preheated 180 ºC oven for 30 to 40 minutes, until golden.
