Spicy vegetable soup with crispy noodles

    butter
  • 1
    onion, chopped
  • 1
    clove garlic, crushed
  • 5
    ml
    freshly grated ginger
  • 2
    ml
    turmeric
  • 1
    cinnamon stick
  • 4
    cardamom pods
  • 1
    chilli, chopped
  • 1
    green apple, cubed
  • 1
    red pepper, cubed
  • 4
    carrots, cubed
  • 500
    g
    butternut, cubed
  • 1
    potato, cubed
  • 2
    Litres
    vegetable stock
 

Method

45 min
 
Heat butter in a large saucepan. Add onion and garlic and sauté until soft. Add spices and cook for 30 seconds. Add apple, vegetables and stock and bring to the boil. Reduce heat, cover and simmer for 40 minutes. Remove whole spices and purée soup in a blender until smooth. Return to the saucepan and reheat until piping hot. Season to taste and serve topped with crispy noodles. Serves 6-8.
