Spicy sweetcorn fritters

Ingredients

  • 500
    g
    frozen sweetcorn, defrosted and drained
  • 1
    onion, chopped
  • 2
    cloves, garlic, crushed
  • 2
    chillies, sliced
  • 240
    g
    self-raising flour
  • salt and freshly ground black pepper
  • 3
    large eggs, beaten
  • 30
    ml
    oil
  • SALSA
  • 2
    tomatoes, finely chopped
  • 1
    small onion, finely chopped
  • 1
    cucumber, finely chopped
  • 1
    chilli, finely chopped
  • 10
    ml
    lemon juice
  • 5
    ml
    vinegar
  • 2
    ml
    sugar
 

Method

15 min
 
Mix all ingredients except the oil together to form a batter.
Heat the oil in a large, heavy-based frying pan.
Drop spoonfuls of the mixture into the pan and fry over a medium heat for 2-3 minutes on each side.
SALSA:
Mix all ingredients together and serve with fritters.
