Spicy sweet potatoes

  • 3
    sweet potatoes
  • canola or sunflower oil
  • 5
    ml
    black mustard seeds
  • 5
    ml
    cumin seeds
  • 3
    cloves garlic, crushed
  • 2
    ml
    ground turmeric
  • 5
    ml
    dried chilli flakes
  • 5
    ml
    salt
  • 125
    ml
    vegetable stock
  • fresh coriander
 

Method

 
Cut sweet potatoes into small chunks.
Heat a little canola or sunflower oil and add mustard seeds and cumin seeds.
Sauté until the seeds start to pop.
Add crushed garlic, ground turmeric and dried chilli flakes and sauté for two minutes to slightly brown.
Add potatoes and salt and toss to coat.
Add vegetable stock, cover and simmer until cooked through, about 15 minutes.
Serve scattered with fresh coriander.
