Spicy stuffed chicken

    medium chicken, whole, defrosted
  • STUFFING
  • 10

    butter
  • 1
    small onion, chopped
  • 1
    clove garlic, crushed
  • 1
    chilli, chopped (optional)

    lean beef mince
  • 125
    ml
    fresh white breadcrumbs
  • 5
    ml
    Worcestershire sauce
  • 2
    ml
    ground cumin
  • 25
    ml
    freshly chopped coriander
  • 1
    red pepper, chopped
  • 1
    large egg, lightly beaten
  • CHICKEN SEASONING
  • 5
    ml
    ground coriander
  • 2
    ml
    ground cumin
  • 2
    ml
    dried mint
 

Method

1 hour
 
Remove the giblets from the chicken. STUFFING: Heat butter and sauté; onion and garlic until soft. Cool and mix with all remaining ingredients. Season to taste with salt and freshly ground black pepper. Stuff into chicken cavity and close, using toothpicks. CHICKEN SEASONING: Mix the seasoning ingredients together and rub over the chicken skin. Season well with salt and freshly ground black pepper. Place chicken into a greased roasting pan and roast in preheated 200 °C oven for one hour or until cooked through. Once cooked, allow to rest for five minutes, then carve and serve each portion of chicken with a spoonful of stuffing.
