Spicy stir-fry

    oil
  • 30
    ml
    hot mustard powder
  • 25
    ml
    fresh ginger, grated
  • 3
    cloves garlic, crushed
  • 1
    chilli, chopped
  • 10
    ml
    turmeric
  • 10
    ml
    ground cumin
  • 1
    onion, finely chopped
  • 750
    g
    vegetables of your choice, cut into bite-sized pieces
  • 85
    ml
    vegetable stock
 

Method

 
Heat the oil in a wok or large frying pan. Add the mustard powder, ginger, garlic, chilli and spices and stir-fry over medium heat for 30 seconds. Add the onions and vegetables and stir-fry for 3-5 minutes until the vegetables are nearly tender. Add the stock and simmer for 2 minutes. Serve immediately.
