Spicy spinach fritters

Ingredients

    g
    fresh spinach, finely shredded
  • 4
    cloves garlic, crushed
  • 15
    ml
    dried crushed chillies
  • 80
    ml
    freshly chopped coriander (or parsley)
  • 375
    ml
    chickpea flour
  • 8
    ml
    gluten free baking powder
  • 50
    ml
    water
  • oil for deep frying
  • 350
    ml
    Bulgarian yoghurt
 

Method

20-30 minutes
 
Mix the spinach, 2 cloves of garlic, 10 ml chillies, 60 ml coriander, chickpea flour, baking powder and water together to form a thick batter. Heat the oil until a cube of bread browns in about 40 seconds. Drop spoonfuls of the batter into the oil and cook for about 5 minutes per batch or until crisp and cooked though. Fry about 4 at a time. Drain on absorbent paper. Mix the yoghurt with the remaining garlic, coriander and chillies and serve with the fritters as a dip.
