Spicy roasted caulifower in lettuce cups

    vegetable oil

    turmeric
  • 1/2

    curry powder
  • 1

    ground cinnamon

    coriander seeds
  • 1

    mustard seeds
  • a pinch of dried crushed chilli flakes
  • sea salt and black pepper
  • 1
    large head cauliflower, broken into small florets
  • 1
    red onion, cut into small wedges
  • 1/2
    cup
    sultanas, soaked in a bowl of hot water for 5 minutes then drained (optional)

    iceberg lettuce, leaves separated and washed
  • 1/4
    cup
    plain yoghurt
  • 25

    toasted fresh coconut
  • fresh coriander leaves to garnish
 

Method

Preheat oven to 210ºC.

Place oil, turmeric, curry powder, cinnamon, coriander seeds, mustard seeds and chilli flakes in a bowl. Season, mix well to combine, add cauliflower florets and onion wedges and stir well to coat.

Place on an oven tray, roast for 15 minutes, or until crispy and cooked.
Remove from oven, stir through sultanas, allow to cool slightly.

To serve: Place 2 tablespoonfuls of mixture into lettuce cups, top with a little yoghurt and sprinkle with coconut and coriander leaves.
