    ml
    olive oil
  • 1
    chopped onion
  • 2
    kg
    tomatoes, peeled and chopped
  • 500
    ml
    fresh coriander leaves
  • 200
    ml
    water
  • 2
    ml
    ground cumin
  • 2
    chillies, chopped
  • 30
    ml
    lemon juice
 

Method

1 hour
 
Heat oil and add onion and tomatoes. Cook over low heat. Blend coriander leaves and water in a processor until fine. Strain and add the drained water to the tomatoes. Add cumin, chillies and lemon juice. Simmer for 45 minutes. Season with salt, then cool and seal in clean jars. Refrigerate for up to 4 weeks.
