Spicy prawn and avocado bites

    prawns, cooked and shelled
  • 2
    ripe, firm avocado pears, peeled, stoned and cut into bite-sized cubes
  • 1
    English cucumber, cut into long, wide strips with a potato peeler

    mint sprigs
  • MARINADE
  • 2
    cloves garlic, crushed
  • 30
    ml
    sugar
  • 30
    ml
    lime juice
  • 60
    ml
    rice vinegar
  • 60
    ml
    fish sauce
  • 3
    chillies, chopped
 

Method

 
MARINADE: Mix all ingredients. Toss prawns and avocado cubes in mixture and marinate for 2 hours. Spear a prawn and a ripple of cucumber on avocado pieces with a cocktail stick, decorate with mint and spoon a little marinade over.
