Spicy potato fritters

Served as breakfast or brunch, these spicy fritters will do just fine.

  • 500
    mashed potatoes, at room temperature
  • 1
    large egg, lightly beaten
  • 160
    self-raising flour
  • 30
    finely chopped fresh coriander or parsley
  • 1
    finely chopped seeded chilli (optional)
  • quarter of a medium-sized onion, very finely chopped
  • sunflower oil
  • fried or poached eggs, and cooked bacon or sausage, to serve
  • avocado pear, to serve
Servings: Change Serving


Mix the mashed potato and egg together. Add the flour, coriander, onion and chilli, if using. Season well with salt and freshly ground black pepper. Add a little more flour if the mixture is still very soft. Set aside.

Put a thin layer of oil into the pan and then add spoonfuls of the potato mixture. Press down to flatten a little. Fry over a medium heat until golden on both sides. Remove from the pan and drain on kitchen paper. Add a little more oil if necessary.

Serve the fritters with poached or fried eggs, crispy fried bacon and pieces of avocado.
