Ingredients (12)

500.00 g pork — fillet, cubed
45.00 ml sunflower oil
1.00 onion — chopped
2.00 garlic — cloves, crushed
1.00 fresh chillies — deseeded and chopped
1.00 tinned tomatoes — chopped
2.00 bay leaves
200.00 ml stock — chicken
1.00 ml peri-peri spice — ground
2.00 ml cumin — ground
0.00 lime — wedges, to serve
0.00 fresh coriander — chopped, to serve

Method:

Heat a little oil in a saucepan over a high heat.
Brown the pork in batches and set aside.
Heat remaining oil and add the onion.
Sauté for one minute, then stir in the garlic and chilli and sauté for 30 seconds.
Add the tomatoes, bay leaves, stock and spices and bring to the boil.
Reduce heat and simmer uncovered for 10 minutes.
Remove the bay leaves.
Add the pork, simmer for five minutes and season to taste.
Serve with lime wedges and sprinkled with freshly chopped coriander.
