Spicy orange puddings

  • 60 g butter
  • 15 ml orange rind, grated
  • 125 ml orange juice
  • 315 g castor sugar
  • 250 ml milk
  • 125 ml cream
  • 65 ml self-raising flour
  • 10 ml ground mixed spice
  • 3 large eggs, separated


Beat together all the ingredients, except the egg whites, until smooth.
Beat the egg whites in a separate bowl until soft peaks form.
Fold the egg whites into the orange mixture.
Spoon the mixture into a greased 1,5 litre baking dish.
Place the dish inside a roasting tin filled with enough water to come halfway up the sides of the dish.
Bake in a 180 °C preheated oven for 50 minutes or until puffed and golden.
Serve warm with cream or ice cream.
