Spicy orange pickle

    ml
    white sugar
  • 500
    ml
    water
  • 15
    ml
    cardamom seeds
  • 6
    whole cloves
  • 10
    ml
    fennel seeds (optional)
  • 5
    cm
    piece fresh ginger, peeled and thinly sliced
  • 1
    whole cinnamon stick
  • 4
    oranges, quartered and pips removed
 

Method

 
Heat the sugar and water over low heat, stirring occasionally until the sugar has dissolved. Add the spices and bring the mixture to the boil. Simmer slowly for 5 minutes, add the orange quarters and simmer for another 45 minutes or until the orange rinds are tender - test with the back of a match. Spoon the orange quarters into hot, sterilised jars and fill each jar with syrup, Seal with sterilised lids. Makes 750 ml of pickle.
