Spicy nuts

    ml
    mixed nuts
  • 25
    ml
    butter
  • 30
    ml
    soft brown sugar
  • 25
    ml
    white sugar
  • 2
    ml
    paprika
  • 2
    ml
    coarsely ground black pepper
  • 5
    ml
    salt
 

Method

6 minutes
 
In a large, heavy-based saucepan, sauté the nuts in the butter over medium heat for about two minutes.
Sprinkle the brown and white sugar, paprika, pepper and salt over the nuts.
Continue sautéeing, stirring continuously, until the sugar caramelises (about six minutes).
Tip the nuts out onto a sheet of aluminium foil and allow to cool.
Separate any nuts that are stuck together and store in an airtight container.
Makes 500 ml nuts
