Spicy mexican mince salad

    head of iceberg lettuce, shredded

    spring onions, sliced
  • 1
    green pepper, thinly sliced

    tomatoes, chopped
  • 1
    carrot, coarsely grated

    tortilla chips
  • SPICY MINCE
  • 210

    extra-lean beef mince
  • 1
    clove garlic, crushed

    chilli powder, or to taste

    ground cumin

    tomato purée
  • 200

    red kidney beans, drained

    barbecue or mild chilli relish
  • salt and freshly ground black pepper
 

Method

In a salad bowl, toss together all the salad ingredients, except for the tortilla chips, and chill. Heat a nonstick frying pan and dry-fry all the spicy mince ingredients for 3-5 minutes, stirring well to prevent lumps. Top the salad ingredients with the warm mince and tortilla chips and enjoy as a main meal salad. Serves 2.
