    cake flour

    ground ginger
  • 5
    ml
    ground cinnamon
  • 5

    mixed spice
  • 5
    ml
    bicarbonate of soda

    g
    butter
  • 125
    g
    soft brown sugar
  • 125
    g
    black treacle
  • 75
    g
    seedless raisins
  • 75
    g
    almonds, coarsely chopped
  • 75
    g
    preserved ginger, chopped
  • 2
    eggs
  • 300
    ml
    milk
 

Method

 
1. Sift together first 6 ingredients. Set aside. 2. Melt butter, sugar and treacle in a pan over a low heat. 3. Mix the raisins, almonds, ginger, eggs and milk into the flour and pour in the melted butter and sugar mixture. Beat until a smooth batter is formed. 4. Pour into a well greased loaf tin and bake in preheated oven at 180 ºC for 2 hours.
