    dried dates, pitted

    dried apricots

    whole almonds

    cashew nuts

    macadamia nuts, halved

    pecan nuts, halved

    lemon or lime, finely grated peel
  • 30

    coriander leaves, chopped (or more to taste)
  • 1
    red chilli, seeded and finely chopped
  • salt and milled pepper
 

Method

 
Warm olive oil in a frying pan over moderate heat. Add dates, apricots, almonds, cashews, macadamias and pecans and toss until apricots and nuts begin to colour. Remove from heat and add lemon peel, coriander leaves and chilli. Mix thoroughly, season to taste and serve straight from the pan.
