Spicy dumplings

    ml
    apricot jam
  • 10

    bicarbonate of soda

    cake flour
  • 1

  • 1

Method

 
Heat the water, sugar, salt and spices together, stirring until the sugar has dissolved. Melt the butter in a separate saucepan and add the apricot jam, stirring until melted. Stir in the bicarbonate of soda (the mixture will foam). Add the cake flour and salt, stirring with a wooden spoon until the mixture forms a stiff ball of dough. Remove from the heat and set aside to cool slightly. Beat the egg, add to the dough and beat with a wooden spoon until the mixture forms a sticky dough. Drop spoonfuls of the dough into the boiling syrup, cover and simmer for 10 minutes until the dumplings are done. Serve with custard or ice cream. Serves 6-8.
