Spicy coffee mousse

Ingredients

    green cardamom pods, crushed
  • 175
    ml
    milk
  • 45
    ml
    instant Nescafé coffee granules
  • 25
    g
    soft brown sugar
  • 250
    g
    plain chocolate, melted
  • 500
    ml
    cream
  • 15
    ml
    gelatine
  • 50
    g
    toasted hazelnuts, finely chopped
  • Greek yoghurt, to serve
 

Method

3 minutes plus infusing
 
1. Line a 15-20 cm loose-bottomed cake tin with cling film overlapping sides. 2. Put cardamom and milk in small pan. Bring to boil. Remove from heat and infuse for about 15 minutes. Strain. 3. Add coffee and sugar to milk and stir to dissolve. Stir in chocolate and mix thoroughly. 4. Whip cream until it holds its shape. Fold in chocolate milk. Heat a little water and add gelatine. Stir to dissolve and gently fold into mixture. Pour into cake tin and chill overnight. 5. Turn out onto serving dish and peel away cling film. Sprinkle with nuts to cover. Cut into wedges and serve with a dollop of yoghurt.
