Spicy choux fritters

Ingredients

  • 1
    quantity choux pastry (see recipe)
  • 5
    ml
    dried crushed chillies
  • 2
    ml
    cumin seeds
  • 2
    ml
    ground cumin
  • 50
    ml
    freshly chopped coriander
  • oil for deep frying
  • 10
    ml
    salt
  • 50
    ml
    castor sugar
  • 5
    ml
    paprika
 

Method

20-30 minutes
 
1. Mix chillies, cumin seeds, cumin and coriander into choux paste. 2. Heat oil until hot enough to brown a cube of bread in 40 seconds. 3. Drop teaspoonfuls of mixture into oil and fry until puffed and golden. Drain on absorbent paper. 4. Mix salt, sugar and paprika together and sprinkle over the fritters. Serve with an avocado dip.
