Spicy chickpea wraps

Chickpea wraps

Ingredients

    ml
    olive oil
  • 1
    small onion, chopped
  • 5
    ml
    cumin
  • 1
    (or more) chillies, seeded and chopped
  • 60
    g
    lean smoked ham, finely chopped
  • 1
    each, small red and green pepper, seeded and sliced
  • 500
    ml
    shredded spinach
  • 500
    ml
    canned chickpeas, drained
 

Method

15 minutes
 
Heat the oil in a saucepan.
Add the onion, cumin and chilli to the hot oil.
Fry until the onion has softened.
Add the ham and fry until lightly browned.
Add the peppers and spinach and continue to cook until the spinach wilts.
Add the chickpeas and vegetable stock and cook until heated through. Serve warm.
Make wraps by rolling up in a flour tortilla or spoon into wholewheat pita breads.
