Spicy chicken with couscous

    olive oil
  • 350
    g
    deboned chicken breasts, diced
  • 2
    cloves garlic, crushed
  • 250
    ml
    tomato salsa
  • 65
    ml
    seedless raisins
  • 15
    ml
    honey
  • 5
    ml
    ground cumin (jeera)
  • 2
    ml
    ground cinnamon
  • salt and freshly ground black pepper
  • 250
    ml
    couscous
  • 65
    ml
    almond slivers, toasted
 

Method

 
Heat the oil and sauté the chicken and garlic until lightly browned. Add the tomato salsa, raisins, honey, cumin and cinnamon and mix. Reduce the heat and simmer slowly until the chicken pieces are tender and done. Spread the couscous in a dish and pour over a cup of boiling water. Sprinkle with salt and stand for a few minutes. Loosen lightly with a fork and divide between four plates. Divide the chicken between the plates and garnish with the toasted almonds. Serves 4.
