Ingredients (13)

24.00 chicken — wings
2.00 eggs
40.00 ml water
200.00 g breadcrumbs — chilli flavoured coating crumbs
oil — for frying
SAUCE
30.00 ml onion — finely chopped
1.00 garlic — cloves, crushed
60.00 ml fresh parsley — chopped
250.00 ml mayonnaise
125.00 ml sour cream — cultured
15.00 ml lemon juice
185.00 g blue cheese — crumbled
sea salt and freshly ground black pepper

Method:

1. SAUCE: Whisk all the ingredients together to combine.
2. CHICKEN WINGS: Cut the tips of the chicken wings and save to use in stock. Cut the wings in half at the joint.
3. Lightly beat the egg and water in a medium-size bowl. Pour the coating into a plastic bag or bowl. Dip the chicken pieces in the egg and then toss in the coating. Place on lightly oiled tray in fridge for 20 minutes to allow coating to set.
4. Heat enough oil to deep-fry the wings. Fry for 12 to 15 minutes until crisp and cooked through.
5. Serve immediately with raw vegetable sticks and individual bowls of blue cheese sauce.
