Spicy chicken salad

    chicken breast fillets
  • 30
    ml
    butter
  • 2
    ml
    dried chilli flakes (or more if desired)
  • 2
    cloves garlic, crushed
  • 2
    ml
    each ground coriander and cumin
  • 1
    ml
    mustard powder
  • 2
    ml
    salt
  • 1
    lemon, juice
  • 1
    large ripe mango or papino, peeled, seeded and sliced
  • YOGHURT DRESSING
  • 250
    ml
    natural yoghurt
  • English cucumber, peeled and grated
  • 15
    g
    fresh coriander, chopped (optional)
  • 2
    ml
    sugar
  • salt and milled pepper to taste
 

Method

 
Wipe chicken breasts with a damp cloth and set aside. Mix remaining ingredients, except mango. Spread spice mixture over both sides of chicken and grill, turning once, until done, 5 to 6 minutes. DRESSING: Mix all ingredients together and chill. Slice chicken lengthways and arrange on a plate with a slice of mango between slices. Add salad leaves and a dollop of dressing and serve.
