Spicy chicken patties

  • 500
    g
    chicken mince
  • 4
    spring onions, finely chopped
  • 80
    ml
    finely chopped fresh coriander
  • 2
    cloves garlic, crushed
  • 3
    ml
    red pepper
  • 1
    egg white, lightly beaten
  • salt and pepper to taste
  • 20
    ml
    oil
  • 1
    lemon, halved
 

Method

 
Mix all the ingredients except the oil and lemon.
Shape the mixture into four patties and refrigerate for 20 minutes.
Heat the oil in a large frying pan over moderate heat and fry the patties for about five minutes on each side or until browned and cooked through.
Squeeze the lemon over the potatoes and drain well on paper towels.
Nutrition per serving: Fat 25 g; carbohydrate 1 g; fibre 1 g; cholesterol 105 mg; 895 kilojoules (215 calories).
