Ingredients (8)

250.00 g chicken mince
5.00 ml red chillies — finely chopped
2.00 ml fresh ginger — finely grated
5.00 ml thai fish sauce
2.00 ml castor sugar
2.00 spring onion — chopped
30.00 ml fresh coriander — chopped
0.00 salt and freshly ground black pepper — to taste

Method:

Preheat the oven to 180 &degC.
Mix all the ingredients and shape into 14 balls.
Grease a baking pan with non-stick spray and arrange the meatballs in the pan.
Add a little water, cover and bake for 15 to 20 minutes or until just done and not dried out.
Serve with rice to which baby peas and a little ginger have been added and a chilli dip on the side.
