Spicy chicken meatballs

  • 250
    g
    minced chicken
  • 5
    ml
    finely chopped red chilli
  • 2
    ml
    finely grated fresh ginger
  • 5
    ml
    Thai fish sauce
  • 2
    ml
    castor sugar
  • 2
    spring onions, chopped
  • 30
    ml
    chopped fresh coriander
  • salt and black pepper to taste
 

Method

 
Preheat the oven to 180 °C.
Mix all the ingredients and shape into 14 balls.
Grease a baking pan with non-stick spray and arrange the meatballs in the pan.
Add a little water, cover and bake for 15 to 20 minutes or until just done and not dried out.
Serve with rice to which baby peas and a little ginger have been added and a chilli dip on the side.
