Spicy chicken liver pâté

    butter
  • 1
    onion, coarsely chopped
  • 250
    g
    chicken livers, cleaned
  • 1
    chilli, chopped
  • 60
    ml
    chopped fresh parsley
  • salt
  • cayenne pepper
  • 1
    lime or lemon, juice
  • 60
    ml
    cream
 

Method

15 minutes
 
Melt the butter over a medium heat and sauté the onion and chilli until onions are soft. Increase the heat, add the livers and cook for 10 minutes. Season with salt, cayenne pepper and parsley. Place the mixture in the bowl of a blender and process until fine, adding the cream and lime juice while the machine is running. Spoon pâté into a serving bowl. Cover and chill before serving with bread or biscuits.
