Spicy chicken breasts in bacon

    dried origanum

    fresh rosemary, finely chopped

    thyme leaves, chopped
  • 5

    caraway seed
  • 5
    ml
    tomato purée
  • 5
    ml
    castor sugar
  • 2
    ml
    ground cumin (jeera)
  • 2
    ml
    turmeric
  • 10
    ml
    chilli paste
  • 1
    clove garlic, crushed
  • 2
    ml
    freshly ground black pepper
  • 1
    kg
    chicken breasts, deboned and if desired, skin removed
  • 250
    g
    streaky bacon
 

Method

 
Mix all the ingredients for the spicy rub. Make three incisions in each chicken breast. Rub the spicy mixture onto the chicken and into the incisions. Cover and chill for 30 minutes. Preheat the oven to 180 ºC. Wrap the chicken breasts in the bacon rashers and secure with cocktail sticks. Arrange the chicken breasts on a baking sheet and bake until the breasts are done and the bacon is crispy, about 20 minutes. Serve with baby potatoes and vegetables. Serves 6.
