Spicy chicken bake

    chicken drumsticks

    cake flour

    cayenne pepper
  • 30

    oil for frying
  • 180
    ml
    dry white wine
  • 45
    ml
    tomato sauce
  • 180
    ml
    chicken stock
  • 250
    ml
    coconut cream or milk
  • 30
    ml
    chopped fresh coriander or rosemary
 

Method

 
1. Coat chicken in flour seasoned with cayenne pepper. Heat oil and fry for 20 minutes over a low heat until brown, turning once only. 2. Add wine, tomato sauce, chicken stock and coconut cream or milk. Bring to the boil and simmer gently for 30 minutes. 3. Thicken sauce with cornflour, if necessary, and sprinkle fresh herbs over the top before serving. 4. Serve on rice or couscous.
