Spicy calamari roll

    soft, white rolls
  • 350
    calamari rings
  • 45
    Thai sweet chilli sauce
  • 2
    spring onions (optional)
  • 2
    big leaves iceberg or cos lettuce
  • lemon

Halve rolls and set aside. Preheat the grill.
Dry calamari well with kitchen towel.
Preheat a pan until hot.
Add the sweet chilli sauce and a little water.
Add calamari and stir-fry over high heat for about 4 minutes.
The sugar in the chilli sauce will caramelise, making the calamari sticky, you don't want it to burn as it will be bitter so be careful of over cooking.
Remove from heat and season with salt.
Pop the rolls under the grill and remove when golden.
Place a lettuce leaf on the bottom half of each roll, pile high with sticky calamari, drizzle with lemon and serve with lots of paper napkins!
