Spicy bobotie

    thick slices of stale white bread

    margarine

    minced beef

    cloves garlic, crushed

    turmeric
  • 10

    ground cumin

    ground coriander

    whole cloves

    whole peppercorns

    sultanas or raisins

    flaked almonds
  • salt and freshly ground black pepper

    chutney
  • 4
    lemons or bay leaves

    milk

Method

 
Soak the bread in water. Melt margarine and fry onions until transparent. Place all ingredients, except bread, bay leaves, milk and eggs, in a large bowl and mix together. Squeeze water from the bread and mash. Add with fried onions to meat mixture and mix well. Spread in a greased ovenproof dish, place lemon or bay leaves over meat mixture and bake at 180 ºC for 45 minutes. Lightly beat eggs and milk together and pour over meat. Continue to bake until the egg mixture has set - about 15 minutes. Serve with yellow rice.
