Spicy beef with vegetables

    soy sauce

    fish paste

    fillet or rump steak, sliced into thin strips

    green beans, trimmed and halved
  • 150

    mangetout, trimmed and halved

    oil
  • 30
    ml
    prepared green curry paste
  • 125

    fresh button mushrooms, sliced

    bean sprouts
  • 60

    beef stock
  • 20
    ml
    brown sugar

    ml
    basil leaves, torn
  • 3
    lime leaves, soaked and shredded
 

Method

10 minutes
 
1. Mix soy sauce and fish paste together in a bowl. Add meat strips and mix to coat. Set aside to marinate for 15 minutes. 2. Bring a saucepan of water to the boil. Add the beans and mangetout and boil for 1 minute. Drain and set aside. 3. Heat oil in a wok or large saucepan until sizzling. Add meat and fry aver a high heat for 1 minute. Reduce heat, add curry paste and stir well, then add remaining ingredients, except for lime leaves, and stir-fry for 4 to 5 minutes. Top with shredded lime leaves or lemon rind to garnish and serve.
