Spicy beef patties

    thick slices white bread, crusts removed
  • enough milk to cover bread

    lean beef mince
  • salt and freshly ground black pepper

    carrot, finely diced

    grated lemon peel

    medium onion, peeled and finely chopped

    sprigs coriander, finely chopped

    natural yoghurt
  • sunflower oil, for frying
  • toasted ciabatta slices, to serve
  • mayonnaise and lettuce leaves, to serve
  • crisp bacon rashers and grilled tomato slices, to serve
  • onion marmalade, to serve
  • roasted potato wedges, to serve


Place bread in a bowl, just cover with milk and soak until softened.
Squeeze gently to remove excess milk, so bread is still moist but not saturated.
Place beef mince in a large bowl and add soaked bread, salt, pepper, carrot, lemon peel, onion, coriander, mustard and chilli paste.
Mix until well blended. Mix yoghurt in lightly.
Dip your hands in water, then shape handfuls of mince lightly into medium-sized patties.
Pour oil to 2 cm deep in a frying pan and heat until piping hot.
Carefully add patties and fry, turning them over quickly from time to time, for 12 to 15 minutes or until the crust is firm and lightly browned on both sides.
Make sure the temperature is not too high and turn frequently, as these patties are inclined to stick and burn because they are so moist.
Spread the toast with mayo and pile lettuce, burger patties, bacon, tomato and a dollop of onion marmalade on top.
Serve with a bowl of crisp, hot salted potato wedges.
